Cane Rosso Birthday Dinner

For Adam's Birthday dinner with friends he picked D Magazine's Reader's Choice: Best Pizza in Dallas at Cane Rosso. We headed into the city and met our friends and ate what Adam calls "the best pizza he's had since he was in Italy." That's a pretty big bill to fill. It was delicious. And he was happy.

If you can't decide what to get, go with something that looks a little familiar. 
The pizza was VERY flavorful, a little spicy and the crust nice and thin just like Italian pizza should be, with just the right soft, chewy texture. Yum.

Spiced Peach Butter

Shamefully, this is my very first "real" canning experience.  I've always wanted to preserve with my mommy so I've been resisting the whole activity—it is a mother daughter experience I've wanted to have. However, the distance is too far and the visits too infrequent. I decided to do it myself before I let too many opportunities pass me by. (Adam had his first experience with a pressure cooker last week, his mom told him how and he canned his raggu.)
So, like a greenie I purchased ALL the canning supplies, water bather, jar gripper thingy, rings, lids, jars. The checkout lady thought I was going to make a giant pot of soup with the water bather. Nope, that's not what this is.

Next, I put on my retired splunking/painting/ and now canning outfit because I always get messier than the average person.

(Found peaches at .49 cents a pound, I think that's good. Is that good?)
Started the canning movie. Check.
Blanching, pealing, mashing, adding spices and just a little sugar, I reduced those peaches to a sticky, heavenly smelling, spluttery mess. (No pectin needed for peach butter because it reduces until very thick on its own...for about 5-6 hours in my case.)
Proudly filling eight jars, I gave them their hot boiling water bath, and as they cooled I confidently listened to each fulfilling "pop" of the lids as they sealed. We love peach butter on fresh pancakes and can vividly see this in our near future.

When It's Hot...

the only thing to do is stay wet. Lake Ray Roberts is our number one cooling off option. It has:
A great beach with showers for rinsing.
Cool water and a little girl that will insist you are a shark.
Sun hats that are too awkward for a good photo...thus reducing you to the "duck face."
Nap time and watermelon.
Canopies to house mounds of food, chairs, and various forms of activities.
Cute babies in swimsuits.
People who will throw food directly into your mouth.
Shirtless husbands—ooh-lah-lah.
And lastly, little girls who are so happy they say "I love you" to everyone.

Pot Stickers

We used to go out for pot stickers at a little Chinese food spot in Provo. They were made from scratch with the best dipping sauce. Oh man. It's been years since we've had good, fresh dumplings...until yesterday. The recipe: here. 
For those of you who've never had a pot sticker, they are filled with a mixture of meat and spices/flavorings. This recipe calls for pork, shrimp and ginger among other ingredients.
